A cozy evening meal from the sea


If it`s Monday or Saturday doesn`t matter. Anyway it`s the right day to have a nice and cozy meal. Just have a look here and you will get a great idea.


Tonight we serve green mussels, gratinated in the oven, with hollandaise and herbs.
This is from the sea, it is healthy, it's delicious, and .... it taste fantastic!

A few ones makes the weeks unnecessary grey. Remember that every day is a party, so you can enjoy it just as much on a Monday, as you do on a Saturday. Especially this is the case in Scandinavia, where they see it almost as a religious sin to enjoy all the week.
It depends certainly on that until the middle of last century they were poor and very religious.
Some linger, but fortunately it has changed somewhat. But still it`s hanging some of this old-fashioned left.
No, life is short, enjoy it, and food and drinks is the best way to do that.

With a chilled bottle of good white wine, this will be a party night.

Especially for people who live on the planet's northern hemisphere, where winter and darkness reigns 6-8 months a year, it is important to preserve the good moments. Enjoy what you have and feel the comfort feeling that good food and drink can provide.

Well, let`s go to business. 
This is what we do…

Sauce Hollandaise
vinegar reduction
2 cups white wine vinegar
1 piece bay leaf
5 pcs black peppercorns
0.5 pcs Shallot onion
1 pinch allspice, ground

The sauce
150 grams butter, preferably unsalted
3 egg yolks
1.5 tsp vinegar reduction
lemon juice, a dash
black pepper, freshly ground

1.Pour vinegar into a saucepan and add the spices. Bring to a boil and reduce to
2 tablespoons.

Make the sauce. Melt the butter. Add the egg yolks in a glass bowl pendant in a pan of simmering water. The water must not touch the bowl. Whisk the yolks until they are fluffy. Add one tablespoon of cold water and continue whisking. Turn off the heat and start whisking in the butter, drop by drop at first, constantly whisking.

3. When all the butter is mixed with the egg yolks, whisk the vinegar reduction and lemon juice. Spice and flavor. Allow to stand still over the saucepan with the hot water while you poach the eggs.

Today, we have frozen green mussels. Take them out of the pack and put them out into a greased form.
Cover them with foil and place in preheated oven at 180 degrees.
Let them stand there for 10-12 minutes.

Remove the form from the oven and remove foil.
Spread evenly over the hollandaise all the shells.
Chop up fresh herbs vegetables like basil and sage. But please take what you have.
Sprinkle it evenly over the shells and the hollandaise.

Now insert the form into the oven again. Turn on the grill and turn up the heat.
Let the form stand there for a few minutes until the mussels and hollandaise have a nice light golden brown color.
Now, it should be ready!

If you have frozen shrimp so it is ok. But please avoid shrimp from salted water! That`s a sin!
But if they are frozen so you do not need to thaw them for several hours.
You simply cook up a pot of water, when it boils then pour the shrimp into a colanderand, dip it into the water a few minutes until they are thawed.
Quick and easy!

Serve with freshly baked baguette. Mayonnaise, fresh lemon.
And, of course ... a bottle of chilled Chablis ...

You have
thus a perfect Monday, or Tuesday, or Wednesday .... Or Saturday evening meal.
Any day suits.
The most important thing is that you enjoy and have a cozy time!
